Used this pan for cooking variety of dishes from Indian curries ( dry as well gravy) to sweets. It is a pleasure to cook in this pan. Used medium heat on glass cook top. Heating was even. Chicken curry got cooked faster and turned out to be much tastier. I believe cooking in All clad pan gives an extra flavor to the food. (I also own Lodge Logic cast iron pans , couple of Calphalon Fry pans. )Pan looks very pretty.It is a good size pan. Cleaning is easy ( never cooked on high heat since it is not needed, cooking on high heat can burn the food ).One caution though- knob gets pretty hot during cooking. Always use pot holder or mitten to lift the lid up while cooking.

This pan is simply beautiful to look at, and cooks like a dream. I used it to make Julia Child's clafouti recipe, and it came out great, with no sticking whatsoever. The pan is great to use on the stovetop, as it is made just like the frying pans, and has the additional benefit of having loop handles that make it fit into the sink for cleaning. I'll mention here that I've learned to season my stainless pans using a method I found online (but that Amazon.com doesn't like to see in a review) and I don't usually have to wash my All Clad pans at all!! I just wipe them out thoroughly with a paper towel. Amazing. I think that with proper use - and maybe even with some abuse - this masterpiece of a casserole will outlast me, and be an item my kids will fight over after I'm gone. I just bought this product. The promotion mentioned on the product site as of 6/1/2012 "Pan comes with a one year trial subscription - 12 issues, to Food and Wine or Travel and Leisure magazine, a Flatbread Lasagna recipe from their cookbook of "Reinventing the Classics," and a link to additional recipes designed specifically for this pan." is over. The link shown in the product insert throws error. I contacted All-Clad and was told, rather tersely, that the promotion expired and sorry for the inconvenience. Product itself is beautiful, and is dishwasher and oven-safe, according to the label.
