The American-based company Lodge has been fine-tuning its construction of rugged, cast-iron cookware for more than a century. No other metal is as long-lasting and works as well for spreading and retaining heat evenly during cooking. Now Lodge has added a new component: stainless steel. Handsome and contemporary, the award-winning Signature Series gleams with marine grade 304 stainless-steel handles that are riveted to the cast-iron body for strength. Specially designed silicone gaskets around the rivets prevent water entrapment, so rust won't become an issue. Each Signature Series pan comes foundry seasoned and ready to use right out of the box. This 12-inch Signature Series covered casserole makes a beautiful addition to any kitchen. The pan's two gleaming stainless-steel loop-style handles add a real touch of class to the black cast iron, as does the ergonomic stainless-steel knob on the tight-fitting lid. But it's not all about looks. The cast-iron pan heats thoroughly on the stovetop and features straight 2-1/2-inch sides that keep in splatter and juices from browning and braising meats. Fill with your favorite lasagna, mac-and-jack, or turkey tetrazzini and bake in the oven. Both the base and lid are oven-safe, so a dish can be started on the stovetop and placed in the oven for baking. The pre-seasoned finish helps prevent food from sticking and rust from developing. To take care of the cast-iron finish, simply scrub the pan by hand after use with a stiff brush (never steel wool) under hot water, and dry immediately. If the handles discolor from oven-use or over-heating, they may be cleaned with stainless-steel cleaner. Everything about this casserole delivers. But I want to warn the future buyers that when cooking on my electric range, the handles do get very hot---probably not enough to burn since you will pull your hands off fast, but definitely not comfortable to hold bare-handed for longer than a second. This is not what I was led to think when I bought it.Well, it isn't a big problem for me anyway since I have other lodge products that have cast iron handles. (Big Lodge fan here!) But don't learn this fact the hard way...

Got this as a gift for my daughter. We both have and use Lodge cookware and love it. You can cook foods evenly over a lower heat than normally required in other cookware and this skillet and lid can go in the oven. Best success with Lodge is to pre-heat your skillet for 4-10minutes on low heat then add your food. It TRULY does clean up with hot water and a paper towel.

I am not going to go into detail of all the pros and cons of this pan. I think they are well listed by the other reviewers however, if you are looking for this pan and wondering why the price has jumped drastically, it is because Lodge has temporarily discontinued the "L" Series (enameled cast iron) and the "Signature" Series (cast iron with stainless accents). You will not find these again till they re-introduce them with new look and design tentatively late 2013. So if you love the signature series buy them while you can or wait till they come back. I personally dont recommend the "L" series over the "Color" series which is not being discontinued but if you really wanted an "L" series get it while you can.
