The previous poster is wrong. I am a pastry chef. Creme Brulee is best when it is 1 inch thick or less. That gives you a better ratio of crunchy top to silky cream.You do have to be careful not to drown your brulees getting them in and out of the water bath with these dishes, and I have had some trouble with chipping, but they work perfectly well for creme brulee.

These look like they would have fit the bill, but arrived chipped and broken. After second attempt, I have moved on to a department store.

Mine arrived in perfect condition, for which I am grateful! I've never used them for creme brulee but they are used almost daily. They hold small servings of various salads - you know, when one person at table refuses to eat onions or other veggies, they can have a salad without those items. They hold small desserts - you know, when a huge piece of cake may be what is wanted but not what is wise! They hold side dishes of vegetables, or individual appetizers ('Just a little, don't ruin your dinner!') or two cookies. The longer I own these dishes, the more they are used. I am so glad I found them!
